Ingredients
Olive or vegetable oil
2-4 garlic cloves, sliced
1 tomato, diced (or 1 tsp tomato paste)
1 tsp cumin seeds
1 tsp coriander powder
1 can fava beans (preferably Egyptian/Sudanese kind with cumin, no chickpeas)
Salt + pepper
2-3 eggs
1-2 TBSP apple cider vinegar or lemon juice
2 TBSP tahina
Arabic bread or any flatbread (e.g. tortillas)
(Optional) Herbs to garnish, roughly chopped (coriander / parsley / mint)
(Optional) 1 Chilli, sliced
Steps
In a saucepan fry on medium heat for 1-2 minutes the oil, garlic, tomato, cumin seeds and coriander powder
Add the can of fava beans, including the water, if present. Add salt + pepper and water to cover, if neccessary.
Cover and bring to a boil, then reduce heat and simmer for 10 minutes
Boil eggs for 6 minutes then put immediately in icewater
Once stew has simmered mash half of the mix
Add tahina + vinegar / lemon juice then taste
Add a bit of water until slightly thinner than yoghurt
Serve - garnish with a bit of tanina, then herbs + chilli

1 TBSP olive oil
2 TBSP vinegar
