Windfall cake

Ingredients

  • 2¼ cups self-raising flour

  • pinch salt

  • ¾ cup margarine

  • ½ cup caster sugar

  • ⅔ cup sultanas

  • 3 cups windfall apples, peeled, cored, diced

  • 2 eggs

  • castor sugar to dredge

Directions

  • Mix flour/salt + rub in margarine

  • Stir in sugar, sultanas + apples

  • Stir in eggs - do not beat

  • Bake in cake tin (8-inch) at 180°C for 50 mins
